Some of us are deeply committed to this conversation because we know that what we eat impacts not only our health but the health of our communities and our earth. Each time you put food in your mouth you are making a choice that has an impact, no matter how small. The multitude of these small choices creates an enormous impact. By being conscious, knowledgeable, and thoughtful about these choices we can effect the whole planet and possibly the future of the universe itself.

Eating is just one example of how our actions can have a greater impact on the world. For example, if you are reading these words then their impact on you (no matter how small or large) is one of the many unforeseen impacts that is occurring when I make the choice to take the few moments to write them (and when you make the choice to read them).
